January 2022

Food and fun sums up this month!

My parents raised me to love food and as I have progressed through life I have discovered a desire to make food healthy, yet delicious.  Here are some of the meals made this last month!

Sourdough bread-cranberry on the left, savory and cherry-almond-coconut on the right!
Dinner group we made an everything. but the bagel loaf to use for French dip sandwiches-yummy!  The beef was leftover prime rib from Christmas.
Taco salad and coconut balls from my Fiber Fueled book.

A tequila shot I was not planning on at the Odyssey...and my kombucha brewing on the counter.
I love the Cuban latte at The Chocolate Bar, but I am trying to be good about not eating dairy due to the acne on my chin, so I likely won't have one for awhile.
Odyssey dinner with Halpines and Monsons!  Such a fun night and yummy food.  Bruschetta board and a pork dinner with grits.
Two more recipes from Fiber Fueled.  Vegetable stir fry on the left over couscous.  Then on the right sourdough with a red pepper spread with roasted sweet potatoes.

Risotto mushroom rice out of Fiber Fueled and a not healthy meal on the right from El Toro :). Moderation!
Shredded beef tacos!
Sweet potatoe stew from Fiber Fueled and then used the leftovers with extra taco shells.  They were both delicious.

My dear friend Karisa had an order of Home Chef that she wasn't expecting and did not want the tofu, so she graciously gave it to us and it was yummy!
Basketball for Miss Reeve!  We are not getting a lot of wins unfortunately, but the girls are growing a lot.  It can be so hard for kids to understand this, but they really have improved so much!

Lincoln tournament.  This was the first time ever our team was pressed full court.  It was definitely a challenge, but the girls worked hard and learned a lot.

Ankenys and Aunt Lisa came to cheer Reeve on:)

Some fun with a few teammates at the boys' game!

Hoops Mania here in Grand Island.  Lots of family came to watch:)

Some of Mike's fun this month.  He was rocking his cooking duties with his post workout look, not a fan of my coffee purchase-ha, always falling asleep, and got a few deer with Patrick this year.

My fun and not so fun this month!  After almost 15 years, we are changing the TV stand out, got a body wrap done with the money from Geno for my birthday/Christmas, unfortunately have to go back to wearing masks due to Omicron-boo, and got to watch some of my students in action at their practicums.  I love getting to see them enjoying time in the classroom:)

Joden's fun this month: Show choir camp/performance and gymnastics began!  We went to Kansas City for the first meet.  We had some time on Friday to enjoy together.  We ate lunch at a bbq place and then enjoyed time at Science City before the meet.  As for the meet he placed 7th out of 14 boys.  Not bad for the first meet.  He got 2nd on vault and tied for 2nd on rings.  Then as a team they got 3rd out of 12 teams.  If he can clean up a few events he will be good to go!

Reeves fun this month: enjoying time with her cousin Quinn, sleepovers with Avery, finally had her Christmas program that got cancelled due to a huge wind storm in December, and playing with a neighbor.

Super fun night out to the Odyssey for mom and dad!  This was our first outing with the Halpines and the Monsons.  Oh my gosh we laughed all night!  One of those nights that was totally unexpected, yet the best time we have all had in a long time:)

Family fun was dinner group!  We decided to do a fun blind tasting activity.  We did a kid one and an adult one.  Ellie won for the kids and Casie won for the adults.  It was fun and Miles especially loved it!

Last few random pictures of the month: Dad and I had a date to the movie and beforehand surprisingly enjoyed dinner home alone because both kids were with friends and the 2021 photo books came in!
